Mexican Zucchini Boats
YES. I didn't believe it either - healthy Mexican food you say?! Oh it is very possible! This recipe is so incredibly delicious, and I promise the whole family will love it! It's a very flexible recipe, and you could sub in just about anything you wanted!

Mexican Zucchini Boats
Ingredients
- 1 zucchini
- 1/4 of a BBQ chicken ( or you could use normal chicken breast, or any other meat)
- 1/4 capsicum
- 1/4 red onion
- 2 tsp of greek yoghurt
- 2 tsp of salsa
- 1 tsp of olive oil
- 2 tsp of hot sauce (I used Nandos hot sauce, you can sub in any sauce you'd like though!)
- sprinkle of cheese ( I used low fat mozzarella)
Method
1. Preheat the oven to 190 degrees celsius
2. Cut zucchini in half down the length of it
3. Scoop out the seeds, leaving the zucchini hollow
4. Coat the inside of the zucchini boat with olive oil, then your chosen hot sauce
5. Dice up capsicum, onion and chicken and mix together
6. Put the mixture in the zucchini boats, ensuring they are completely filled
7. Sprinkle with cheese and place in the oven for approx. 30 minutes
8. Take out the boats and top with greek yoghurt and salsa
9. ENJOY!
