Blueberry Bliss Balls

There is something really magical about combining blueberries, brazil nuts and coconut. They really are the perfect trio, and these super healthy bliss balls will have you reaching for seconds (or fourths!). 

You know those nights where you toss & turn in bed and just can’t get to sleep? I’ve been having quite a few of those recently, and I just hate wasting time in bed if I’m not sleeping. These little beauties were created at 12:30am in the morning, knowing that I had to go to work that day. Some call it crazy, I call it my creative flair.

 

I love bliss balls, and these are probably my favourite to date (excuse the double entendre). These were just random experimentation gone right, and I’m so happy to be able to share these with you.As usual, if you make these, please comment and let me know! You’ll need:

-       15 pitted dates

-       ½ cup shredded coconut

-       1 very large tablespoon nut butter (I used Mayvers super spread)

-       ½ cup of fresh blueberries

-       1 ½ cups of brazil nuts

-       1 tablespoon of coconut oil

-       2 tablespoon Blackmores Superfoods wild blueberry blend


Grab your food processor and ensure the bowl is completely clean and dry. Pour in your dates and pulse into a date paste.

Add in 1 cup of brazil nuts (we will save the others for later) and pulse until it looks like a nutty jam.

Pour in the rest of the ingredients (NOTE: only pour in half the shredded coconut now) and blend until the consistency is sticky but mouldable.

Cut up the remaining brazil nuts (1/2 cup) into smallish pieces, and then mix (with a wooden spoon not the processer) through the mixture, so you have nutty goodness throughout!

With clean, dry hands, pull out the mixture and roll into bite size balls. Spread the rest of the shredded coconut on a cutting board and roll the balls in the coconut.

Cover and put the balls in the fridge until ready to be eaten. Due to the fresh blueberries, these taste REALLY good refrigerated!
